All our knives are made of chemically stable Zirconium oxide, the new High-tech-material that has almost the same hardness as diamonds.
 
 

 
The original mixture is:

Y2O3 5.25
SiO2<0.015
Fe2O3<0.01
Na2O<0.01
Al2O3<0.25
Cl-<0.01
 
From the beginning it is only a powder that later on will be molded and calcined, thereby creating this extremely hard and durable material.
From the beginning the raw knife material is white, but when using a special calcine method at specific temperature, the material turns black and more solid.
 
To ensure product quality we have established a quality control cheme as below.
 
 

 

The final inspection is made by a knife master that will give the knife its final ultra sharp edge.
In hardness comparison on a scale from 1 to 10 a steel knife has 5-6, our ceramic knives 8-9 and a diamond 10.

The final product is a extremely hard, non-stick material that is impervious to acid foods, non-alergenic, and absolutely stain and rust proof. It does not leave behind any metallic taste or smell, helping to maintain each food's taste.

VonSchieren Ceramic Knives are the most valuable component in every well equipped kitchen, but it can not replace steel knives totally.
In some areas (bending, levering, twisting, hammering, graping or splitting bones or frozen food) you should still rely on a steel knife. Zr02 is flexible, but not as much as steel.

The big difference compared to steel knives is the hardness and weight.
Our knives will last for many years to come before you will notice any difference in "cutting ability".
